Pancake time – get in my belly!!

Texters and callers suggestions for you pancake needs!

4oz plain flour, pinch of salt, 1 egg, ½ pt milk or milk and water (which I use)

Mix flour salt, make well in centre and break in egg.

Add half the liquid and beat till smooth. Add remaining liquid and beat until
well mixed.

Prepare pan: small amount of butter just to coat pan and heat.

Clean with kitchen paper and repeat.  Then cook pancakes by putting tiny
amount of butter to coat pan (high enough heat)

Put mixture in to just cover pan and cook until golden then turn over and
repeat.

Place on plate add caster sugar and lemon juice and roll up.

Serve with a smile Mum X

Mix one pound of flour with one pint milk and four eggs.

Whizz in food processor for a few mins.

Leave in fridge for the day or a few hours then make pancakes.

You can add sugar or pure vanilla if you want to sweeten them a bit.

Enjoy. Ann in Celbridge
